Soy lecithin is used in the manufacture of the couverture chocolate they use. It’s an emulsifier that makes it easier to mix ingredients (cocoa paste, cocoa butter, sugar, etc.) during conching. Making up less than 0.5% of the total weight of the final product has no effect on taste. Their suppliers provide GMO-free soy lecithin.
